Raw chocolate carob mousse
This rich dessert is always a hit when I make it for friends and family and will please vegans and non-vegans alike - most people wouldn't even guess there was fruit in it. Original recipe was found at The Rawtarian but I substituted some of the cacao for carob for a richer/sweeter flavour and darker colour. I have also doubled the recipe so it will feed about 6-8 people.
Ingredients:
- 2 large avocado
- 2 banana
- 6 tablespoons of coconut oil
- 4 tablespoons of raw cacao powder
- 4 tablespoons of carob powder
- 4 tablespoons of agave nectar
- 1/4 teaspoon of sea salt
- Approximately a 1/4 cup of cacao nibs (optional)
Method:
Throw all the ingredients and half the cacao nibs into a food processor or high powered blender, such as Optimum or Omniblender, and pulse into smooth and well mixed. Pour into individual serving size ramekins or a large serving dish. Garnish with the rest of the cacao nibs. Put in fridge for about an hour to set or until ready to serve.
